Somewhere between capital-C Cooking and giving up (i.e., whatever-is-in-the-freezer-is-dinner) is what you might call remixing: taking a bit of premade food, leftovers, whatever you got in your fridge, et al. and making something new out of it. Maybe it’s some ground meat left over from taco or burger night; maybe those canned crescent rolls are gonna go to waste if you don’t do anything with them. Doesn’t matter. The idea is that you do something.
Now, remixing dinner can take out a lot of forms–sandwiches, pasta or rice dishes, just a bunch of random things on a plate–but our throughline is dough, for which we often turn to the premade stuff that Big Ag does so well. It’s all right there in the freezer aisle of your local grocer: puff pastry, phyllo, pizza crust, etc. It all relies on the same universal truth: that fat + flour turns anything into something. On weeknights, that more than counts as dinner.

Our usual go-to for the child are empanadas with whatever protein we have in the fridge, which you don’t need a recipe for: just smear cream cheese across the center of a thawed empanada disc, layer on some ground meat or small chicken pieces, fold over and close up + brush all over outer surface with some mixed egg; air fry for five minutes at 375, then cook for another 2-3 minutes at 350. Simple. Your kid(s) will be more than content.
