It’s breakfast time and you’re on the fence: you want to do a bit more than an Eggo but a bit less than a, you know, recipe-recipe/production/mess. What to do? Pro tip: stick lunch into it. Here, we take what your child loves about peanut butter and jelly (and banana) sandwiches and get it into waffle form, incorporating those classic flavors–and their nutrition–into breakfast. Fun, simple, and quick, it’s an easy way to make the first meal of the day both substantive and silly. Be sure and get your kids involved in making this one: it’s an ideal early kitchen collab!

1 Banana (make sure it's ripe)

Instructions

Prep

  1. Mash banana in a large bowl until paste-like. Add in egg; mix.

  2. Pour in milk, vanilla extract, and a spoonful each of peanut butter and jelly; mix until blended. Then add both flours, chia seeds, baking powder, cinnamon, and a pinch of salt; stir to combine.

Cook

  1. Preheat your waffle iron; grease surface with cooking spray.

  2. Pour batter onto iron: just barely covering the bottom of the iron if desiring a crispier waffle; coating the iron if wanting a fluffier, softer one.

Serve

  1. Assuming your peanut butter and/or jelly are lacking or light on refined sugar, the waffle will not be sweet; maple syrup may be in order. We like to cut a waffle into quarter pieces, an ideal size for dipping, fork practice, and/or portion and bite control.
