With apologies to Romans for (slightly) bastardizing one of the Eternal City’s iconic dishes, here’s a simple way to help your child’s pasta preferences move beyond buttered noodles or red sauce from a can: make it more like breakfast. Taking inspiration from pasta carbonara, but also taking liberties because we’re cooking for children, we’ve cooked up this pasta carbonara for kids adaptation that maintains all the creamy richness of the authentic Italian take but adds visual and flavor nods—bacon, tomato sauce—with which your child is familiar and likely approves. Bacon and eggs, basically–but make it pasta. It’s a dish almost as easy and simple to make as it tastes—if you can just get your kid to try it, we are confident they’ll love it.

  4. Sauté Aromatics: In your pan or pot, cook the diced onion in medium-low heat until translucent, then stir in tomato paste for 30 seconds.
  5. Emulsify & Combine: Reduce heat, melt in the butter, toss in the warm pasta, and pour in reserved pasta water. Remove from direct heat and swirl in the egg-parmesan mixture, folding the noodles repeatedly until the sauce coats everything into a pale yellow, velvety finish.

This pasta carbonara for kids reimagines the classic Roman dish with familiar breakfast flavors like crisp bacon and eggs, plus a hint of tomato paste for picky eaters. It’s a creamy, quick-fix weeknight meal that will easily expand your child's pasta palate beyond plain buttered noodles.

Instructions

  1. Dice onion into small pieces.
  2. Cook the bacon on low heat until crisp; reserve the bacon grease left over in the pan. Chop up the bacon slices into small pieces.
  3. Fill a pot you use to make noodles 1/3rd of the way up with water; bring the pot to a boil and salt generously. Cook pasta according to package directions.
  4. While pasta cooks, separate the egg yolks and place in a small bowl. Beat the yolks until blended, then stir in enough parmesan to the mixture for it to be icing- or pancake batter-thick. Add a spoonful of bacon grease to the egg-parmesan mixture and stir until blended.
  5. Drain the pasta, but reserve 1/3rd of a cup of the pasta water.
  6. In a pan–or even the pot you cooked the pasta in–cook the onion at Medium-Low until translucent, roughly three minutes. Add in the tomato paste, stir, and let cook for 30 seconds.
  7. Reduce heat. Add butter pat into pan/pot and swirl around until melted. Return pasta to the pan/pot and pour reserved pasta water over the top; toss to coat. Once pasta feels warm, swirl in the egg/parmesan mixture all over the pasta, then fold the pasta over itself a few times to distribute the egg mixture. Stir a few times more until the egg is a pale yellow color.
  8. Add a pinch of salt and whatever parmesan cheese you have left and mix one more time.

Serve

  1. Consider yourself warned: this is a great slurping pasta, and the sauce is thin–you may want to create some distance between you and your child and/or put a tarp on the floor underneath him or her.

Adapt

  1. If you don’t have tomato paste, or if your child can’t live without red sauce, go ahead and add a few splashes of marinara–we do it all the time. If you’re looking to make a full meal out of this one dish, feel free to add meatballs and/or peas–both play nicely with the pasta.
