Apple picking with the kiddos feels like a contact sport and doesn’t have the ROI to warrant it. The long drive to get to an orchard. The exorbitant prices to get a basket of apples and/or entertain your child before, sigh, taking an equally long drive home. The whinging. It’s a long day without much to show for it–unless, of course, you have the right apple upside-down cake recipe.

You found it, obviously. So is the move here: cake (obviously). But to make it really sing, to make it really worth it, let’s turn apple cake on its head–literally. Upside-down. Inside. Apples everywhere, along with natural cakefellows: honey, cinnamon, and lots and lots of butter and olive oil. All that goodness has allowed us to cut the proportion of sugar used to less than half of that of similar recipes–and you won’t even notice the difference. Worth the trip.

Ingredients Overview

  • Granny Smith Apples: Tart apples work best for an easy apple upside down cake because their bright acidity cuts through the sweetness of the caramel, though you can substitute whatever variety you have in your crisper drawer.
  • Honey & Brown Sugar: Splitting the sweetener between golden honey and warm brown sugar gives the topping a deep, rich caramel notes while keeping the cake itself lightly sweet.
  • Unsalted Butter: Used to cook down the apple slices until tender and create the luscious caramelized coating at the base of the pan.
  • All-Purpose Flour: Forms the light, soft crumb structure of the cake.
  • Cinnamon: Adds a cozy, warm spice profile that pairs naturally with baked apples.
  • Leaveners & Salt: Baking powder, baking soda, and salt balance the heavy liquids and ensure a light rise in the oven.
  • Eggs & Milk: Provide structure, protein, and moisture to hold the batter together nicely.
  • Olive Oil & Vanilla Extract: Olive oil delivers an exceptionally moist texture that lasts for days, while vanilla highlights the baked honey flavor.

Steps Summary

  1. Prep the pan: Preheat your oven to 325°F and generously grease a 9-inch pie pan with butter or baking spray.
  2. Prep the apples: Core two apples. Dice one half into small cubes and spritz with lemon juice; slice the remaining three halves into thin, uniform slices.
  3. Caramelize the slices: Sauté the apple slices in butter, lemon juice, and three tablespoons of honey over medium heat until lightly golden, then allow to cool.
  4. Mix dry ingredients: Whisk together flour, cinnamon, salt, baking powder, and baking soda in a bowl.
  5. Whisk wet ingredients: Combine eggs, vanilla, brown sugar, and remaining honey, then slowly whisk in the olive oil and milk until fully emulsified.
  6. Assemble and bake: Line the bottom of the pie pan with cooked apple slices, fold the diced apples and dry mixture into the wet batter, and pour over the slices. Bake for 35–40 minutes.
  7. Flip and cool: Run a knife around the edge, invert onto a cooling rack immediately to reveal the top, and let rest 10–15 minutes before slicing.

FAQ

What are the best apples to use for an easy apple upside down cake?

Tart varieties like Granny Smith or Honeycrisp hold up best during baking because their firmness keeps them from turning to mush, and their crisp acidity balances the sweet honey glaze.

Can I substitute olive oil with another oil or butter in the batter?

Yes. Neutral oils like vegetable or canola oil work cleanly, melted butter adds a richer flavor, or coconut oil offers a slight sweetness.

Why is my upside-down cake sticking to the bottom of the pan?

Greasing the pan thoroughly before adding the apples and flipping the cake while it is still warm right out of the oven prevents the caramelized fruit layer from cooling and sticking to the pan.

Can I make an easy apple upside down cake in a springform pan or cast-iron skillet?

A 9-inch cast-iron skillet or cake pan works wonderfully. If using a springform pan, wrap the exterior bottom securely in aluminum foil to keep butter and honey from leaking out into your oven during baking.

How should I store leftovers?

Keep the cake covered tightly at room temperature for up to 2 days, or store it in an airtight container in the refrigerator for up to 5 days.

Instructions

  1. Preheat oven to 325. Butter, grease, or spray a 9” pie pan, making sure to generously coat the sides of the pan.
  2. Halve both apples; remove core and seeds from both. Take one apple half and cube/dice into small pieces; spritz with a bit of lemon and set aside. For the remaining three apple halves, cut top down to create thin slices.
  3. Set a large pan to Medium; once hot, add in butter and melt. Once bubbling, add in apple slices, squeeze lemon half over the top of the slices, and drizzle with three tablespoons of honey. Cook until apple slices are gently browned on one side, roughly 4-5 minutes. Remove from heat and allow to cool.
  4. While the apple slices cook, mix the flour, cinnamon, salt, baking powder, and baking soda in a model, sifting to make sure the dry ingredients are integrated.
  5. In a larger bowl, mix the eggs, vanilla extract, brown sugar, and remaining seven tablespoons of honey until blended. Add in the olive oil a portion at a time, making sure to blend it in fully with the other ingredients before adding more. Slowly add in the milk, continuing to stir until blended fully.
  6. Add half of the dry ingredients to
  7. Line the bottom of the pan with the cooked apple slices; if you run out of room on the bottom, layer any additional slices on top of the first layer of apples. Pour batter on top of the slices, then shake or stir to ensure even distribution across the pan.
  8. Bake for 35-40 minutes.
  9. Place pie pan on a cooling rack. Run a butter knife around the rim to separate cake from the pan, then quickly flip the pan over and onto the rack so that the bottom of the cake is now on top. Allow 10-15 minutes to cool before serving.

Serve

  1. You can drizzle a slice with a bit more honey or top with whipped cream, but we like this best as a snacking cake: just slice into small slices and have at it.

Adapt

  1. Recipe would work equally as well with pears instead of apples. Do a savory take with potatoes by slicing thin rounds of potato and dicing up half an onion and/or pepper; remove the sugar, reduce the flour to 1 cup and increase the salt to 2 teaspoons and the eggs to three.
