Steam the carrots until soft, roughly 10-15 minutes. Allow to cool 10 minutes.

Add ½ cup of water to your blender followed by the steam carrots. Blend until a smooth liquid, adding water a spoonful at a time as needed to thin the liquid.

Place the flour, salt, and yeast into a large bowl; sift until well combined. Add in the carrot juice and half a tablespoon of olive oil; stir until flour is completely blended. Cover bowl with lid or plastic wrap and refrigerate overnight.

Chop scallions into small rings. Rub hands with a bit of oil, then add scallion slices, ginger, and garlic to the dough, pushing and rolling dough until well distributed.

Spread a generous amount of oil (~two tablespoons) around the bottom and sides of a 9x13 shallow baking pan. Pinch dough into a rough ball and place onto oiled pan. Cover with a kitchen towel (or plastic wrap) and let sit for 30 minutes.

Oil your hands again, then stretch and push the dough into the pan so that it fills up the space. Place towel or wrap over the top of it again and let stand for 2-3 hours.

Optional: to add carrot to the top of the pie, add the grated carrots to a bowl, along with a teaspoon of oil and a pinch of salt; cover and microwave for a minute to soften. Set aside to cool.

Preheat oven to 450°F. Drizzle remaining olive oil (~1.5 tablespoons) all over dough; press and stretch dough to fill all corners of the pan and ensure the dough is even throughout. If using grated carrot topping, sprinkle all over the top of the dough, then press the pieces into the dough (which will also create the trademark focaccia dimples.) If not using the carrot pieces, simply dimple the focaccia every inch or so.

Bake until golden brown on top and pizza-crust brown on the bottom, roughly 20-25 minutes. Remove from heat, then remove from pan and place on cooling rack or cutting board to cool for a few minutes before cutting and serving
