Prep

  1. Pat dry chicken pieces; remove the bone from each thigh meat piece. Pound the thighs a few times with a meat pallet or tenderizer but do not flatten them. Sprinkle salt and pepper over each piece. If using slider-sized buns.
  2. Set up your batter station: fill the bottom of one shallow and flat container with all-purpose flour; drop the egg and a splash of soy in the next one and mix until blended; fill the bottom of the third with your breadcrumbs.
  3. Dredge each chicken piece in the flour, shaking the thigh to remove any excess flour. Dip into the egg, again removing from container and shaking off any excess liquid. Roll in. Repeat for remaining piece(s).

Cook

  1. Coat your air fryer in cooking spray, then lay each piece down in the air fryer, making sure the thighs do not touch. Mist the tops of the chicken pieces with cooking spray.
  2. Heat at 385 for 7-8 minutes, flipping the pieces roughly halfway through.
  3. While the chicken cooks, make the honey butter: in a small bowl or cup, microwave the butter pat until it melts, roughly 30-35 seconds. Add in a pinch of salt and enough honey to thicken the mixture; stir until blended.
  4. Toast your bottom buns; add a light spread of mayo to them.
  5. Place chicken pieces on top of the bottom bun, then brush chicken with honey butter. (Note: if using slider-sized buns, cut chicken pieces in half following cooking.)

Adapt

  1. Want to use chicken breasts? Slice one in half or to the relative size of the buns you are using, then pound down as much as you can; batter the chicken pieces as described above. Cook at 385 for eight (for juicy chicken) or nine (firmer) minutes.

The sauce component is easily flexed: add a glug of orange juice, a bit of soy, and some cornstarch and you’ve got an orange chicken sandwich; for a bolder, saucier take, mix the honey and butter with barbecue sauce and dip the sandwich in it before placing on a bun.
