Prep

  1. Cut steak against the grain and into long thin pieces, then cut the pieces horizontally to shorten. (In other words: aim for slices shorter and a bit thinner than what you’d use for fajitas.) Place the steak pieces in a bowl or small storage container. (Note: for ultra-tender beef, see the “Adapt” section.)
  2. Pour one tablespoon of soy sauce and the baking soda over the top of the steak; toss to mix. Store in the fridge for at least 30 minutes before cooking.
  3. In a small bowl, add the remaining soy sauce with the teriyaki, vinegar, and cornstarch; blend until combined. Set aside.
  4. Vegetable prep time: mince the garlic into small pieces. Chop the onion into long and thin wedges. Cut the pepper into small chunks. Halve the tomatoes.
  5. Cook the french fries per the package directions. If you want fries to maintain crispness, be sure and cook them the maximum amount recommended.

Cook

  1. Heat a tablespoon of oil at Medium High in a wok or large pan; once smoking, add in half the steak pieces and cook until pieces are fully browned, stirring frequently, roughly 90-120 seconds. Remove cooked steak, add more oil to the pan if needed, and then repeat for remaining meat. Set aside cooked steak pieces.
  2. Add in onions and peppers and cook until they soften and brown, roughly 2-3 minutes. Add garlic and tomatoes and cook for another minute, stirring constantly.
  3. Add steak and french fries into your cooking device, then drizzle the sauce all over; cook, mixing continuously, for another minute.

Serve

  1. For those children who are picky about how ingredients are mixed and/or presented, just separate out the elements they eat into distinct piles–i.e., a clump of steak here, a stack of fries next to it, a few peppers nearby, etc. In Peru, this dish is typically served with rice, which we highly endorse as a side when serving this, not only because it sops up the sauce well but also because it provides heft and calories should your child pick at various components without really committing the dish.

Adapt

  1.  To ensure the tenderest, toddler-friendliest meat, velvet the meat prior to cooking: mix a ½ teaspoon of baking soda with ¼ cup of water, then pour over the sliced steak; let sit for an hour or two. Rinse the steak pieces under water, shaking out any excess water; then toss the meat in a mix of two teaspoons of soy sauce to one teaspoon cornstarch, letting it sit in that marinade until you’re ready to cook.
