The word salad is both general and generous enough that it can encompass basically any mix of food that’s cut up and dressed with a sauce and not have to be called as such to your kids–especially if they’ve already designated it a “grown-up” food. This is a salad for toddlers, sure; it doesn’t need to be called as such. That there is a dressing glazing the fruits, or that you eat the components together? Details. If your child already knows and likes peaches and tomatoes, give it no name, in fact–they know what it is, should already like it. Say nothing: let them enjoy it as/for what it is, without knowing it is something somewhat different. Then build from there with our other great “salad” recipes for toddlers.

(Note: this recipe is portioned for two adult eaters and one toddler; if serving to four or more people, add a second (or third) peach and four more tomatoes.)

Description

A simple and delicious salad for toddlers that uses fruits your child already loves and ever so lightly dresses them. It's familiar, yet new; comforting, yet different.

Instructions

Prep and Assemble

  1. Remove and stone from the peach; chop fruit into relatively even chunks. Halve–or quarter, if especially large–the tomatoes. If using fresh herbs, dice into small pieces.
  2. Combine ingredients together, then drizzle oil and vinegar over the top, followed by a pinch each of salt and pepper; toss to coat.
  3. Layer the ingredients on your serving plate or bowl so that the peaches and tomatoes are intermixed; once displayed, sprinkle basil or cilantro all over.

Serve

  1. We like to put this on the table and let our child come to it, rather than plating it for him; we don’t tell him how to eat it, instead letting him tackle it his own way–it’s “not” salad, remember.

Adapt

  1. If your child’s preferred or primary fruit is berries, feel free to toss in some blueberries or raspberries–they work well here. To make the salad more substantial–especially for yourself if it’s going to be your lunch or dinner–add some chunks of mozzarella, chicken, and/or bacon.
