Instructions

  1. Mix the yogurt, oregano, garlic powder, and a pinch of salt in a small bowl or ramekin; zest the lemon skin into the bowl, followed by juicing the lemon in there, too. Grate enough cucumber into the bowl that there are little flecks throughout the sauce, then squeeze into the bowl any juice in the remaining cucumber. Mix.
  2. Split your ground beef into four or five servings; roll into a ball. Place each ball of meat between two pieces of parchment paper and flatten, expanding the patties as wide as possible. Leave the bottom piece of parchment paper on each patty.
  3. Mix the oregano, cumin, paprika, garlic, salt and pepper until fully combined. Sprinkle the specific mixture all over the top side of the patties.
  4. Heat a large pan (or two) to Medium High. Lightly oil the pan.
  5. Place beef patty top side down into the pan; remove parchment paper sheet and press down on top of patty with a spatula. Sprinkle more spice mixture on the top of the patty. Cook until the underside is fully browned, roughly two minutes.
  6. Add a bit of cheese or a small dollop of yogurt sauce to the center of the patty, then affix the pita over the top of the meat, pressing down with the spatula to adhere; continue pressing down all over the top of the pita to ensure it sticks to the meat.
