Instructions

  1. Remove the membrane from the back of the rib rack by lifting up the thin white skin and pulling it down the length of the spine until it rips off. Cut the rack up into individual riblets. Recommended but optional tip if using a rib rack from a butcher or that wasn’t pre-packed: soak the ribs for twenty minutes in a bowl of water with one teaspoon of sugar mixed in–helps remove any remaining blood. Dry off rib pieces.
  2. Preheat oven to 350.
  3. Season the rib pieces with a couple of pinches of salt and garlic powder; add in the sesame oil and potato starch, then toss to coat.
  4. Lay the ribs on their side on a flat baking pan; cook for 25 minutes, flipping the rib pieces halfway.
  5. While the ribs cook, make the sauce: mix the hoisin sauce, oyster sauce, sesame oil, and ketchup until nice and thick.
  6. Remove the ribs from heat and turn the oven up to 400. Baste the ribs with your sauce.
  7. Return ribs to the oven, cooking until sauce has a glazed appearance, roughly five minutes.
  8. Sprinkle sesame seeds and cilantro all over (optional).

  1. Feel free to slice the meat right off the rib for easy eating. While chips or fries are easy side options, our personal favorite is to heat some cooked corn niblets–from a can or reheated in the microwave–with a bit of mayo and a bunch of shredded cheese.

  1. The sauce can go in almost any direction you’d like it to just by switching out the hoisin for another option–say, gojuchang for something spicy. You can also keep it simple by using jarred barbecue sauce as your marinade–just skip all the listed sauce ingredients above.
