Dice the onion, pepper, and garlic into small pieces. Score the hot dogs length-wise. If you haven’t already,

Melt the butter in a small pot–but one long enough to allow the hot dogs to sit on the bottom–set to Medium heat. Once bubbling, add in the onion and bell pepper and cook until the onion is soft and translucent, about 3-4 minutes. Add the garlic pieces and cook for another 30-60 seconds.

Add the tomato sauce, oregano, and a big splash of water to the pot; increase the temperature to Medium High and bring pot to a boil. Once bubbling, cover the pot, reduce heat to Low, and simmer for 10 minutes.

Submerge the hot dogs into the sauce, making sure the sauce gets all into the cut side of the hot dog. Cover the pot again and let the hot dog cook for 5-6 minutes in the sauce until plump.

Remove the dogs from the pot and place directly into hot dog buns. Pour enough of the tomato sauce from the pot to coat the hot dog but not soak the bun.

On one of side of the hot dog and bun, squiggle or spread mayonnaise all down the length of the dog/bun; on the other, spread the mashed potatoes length-wise. This will ensure the hot dog and all its components stick to the bun.

Zig-zag ketchup and mustard over the top of the hot dogs, then stud the top with your peas and fries/crunchy element. Grate or sprinkle parmesan cheese over the top.
